Ingredients
- 2 apples, peeled, cored, and sliced
- 1 cup dates, chopped
- 1 cup boiling water
- 1 tsp baking soda
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions

Preheat your oven to 350°F (175°C). Grease a baking dish.

Place the chopped dates in a bowl and pour boiling water over them. Stir in the baking soda and set aside.

In a separate large bowl, cream together the butter and brown sugar until light and fluffy.

Beat in the eggs, one at a time, followed by the vanilla extract.

Gradually add in the flour, baking powder, and salt. Mix until just combined.

Drain the dates, reserving the liquid. Add the dates to the batter and mix well.

Pour half of the batter into the greased baking dish. Arrange the sliced apples on top, then pour the remaining batter over the apples.

Bake for 40 minutes, or until the pudding is golden and springs back when lightly touched.

In the meantime, make the sticky toffee sauce by combining the reserved date water with 1/2 cup of brown sugar in a small saucepan. Bring to a boil and simmer for 5 minutes, or until the sauce thickens slightly.

Remove the pudding from the oven and poke holes all over the top with a skewer. Pour the sticky toffee sauce over the pudding, allowing it to soak in.

Serve the sticky toffee apple pudding warm with a scoop of vanilla ice cream or a dollop of whipped cream.
