Ingredients

  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 1 can pineapple rings, drained
  • 4 maraschino cherries
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a saucepan, melt the butter and stir in the brown sugar until dissolved. Remove from heat.

  3. Divide the butter and sugar mixture evenly into 4 glass dessert cups.

  4. Place a pineapple ring on top of the mixture in each cup and place a cherry in the center of each ring.

  5. In a mixing bowl, combine the flour, baking powder, salt, granulated sugar, milk, and vanilla extract. Mix until smooth.

  6. Pour the batter over the pineapple rings in each cup, filling them about 3/4 of the way full.

  7. Place the cups on a baking sheet and bake for 25 minutes or until a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let cool for a few minutes. Then, carefully invert each cup onto a serving plate, allowing the pineapple and caramel to drizzle over the cake.

  9. Serve warm and enjoy!
