  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 4 pineapple rings
  • 4 maraschino cherries
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 egg

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Melt the butter and pour it into a round cake pan. Sprinkle the brown sugar evenly over the butter.

  3. Arrange the pineapple rings on top of the brown sugar, placing a cherry in the center of each ring.

  4. In a separate bowl, whisk together the flour, granulated sugar, baking powder, and salt.

  5. Add the milk, vegetable oil, vanilla extract, and egg to the dry ingredients. Mix until well combined.

  6. Pour the batter over the pineapple rings in the cake pan, spreading it out evenly.

  7. Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool for 10 minutes, then invert it onto a plate to reveal the pineapple topping.
