How To Make Baked raspberry & bramble trifle with Drambuie

Ingredients
- 1 cup fresh raspberries
- 1 cup fresh brambles (blackberries)
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 8 slices of sponge cake
- 1/4 cup Drambuie liqueur
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- Fresh mint leaves for garnish

In a medium saucepan, combine the raspberries, brambles, granulated sugar, and lemon juice. Cook over medium heat until the berries break down and release their juices, about 5 minutes. Remove from heat and let it cool.

Preheat the oven to 350°F (175°C). Cut the sponge cake slices into small squares.

In serving glasses or a trifle dish, place a layer of sponge cake squares at the bottom. Drizzle with a tablespoon of Drambuie liqueur.

Spoon a layer of the cooked berry mixture over the cake. Repeat the layers until all ingredients are used, finishing with a layer of berries on top.

Bake in the preheated oven for 30 minutes or until the top is slightly golden.

In the meantime, prepare the whipped cream. In a mixing bowl, whip the heavy cream and powdered sugar until stiff peaks form.

Once the trifle is baked, let it cool for a few minutes, then top each serving with a dollop of whipped cream and a fresh mint leaf for garnish.
