Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup key lime juice
  • 1/4 cup milk
  • 1 tsp key lime zest
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup powdered sugar
  • 1 tbsp key lime juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

  3. In a separate bowl, combine the melted butter, key lime juice, milk, and key lime zest. Whisk until well combined.

  4. Pour the wet ingredients into the dry ingredients. Stir until just combined, being careful not to overmix.

  5. Pour the batter into the prepared cake pan and spread it evenly.

  6. Bake for 25 minutes, or until a toothpick inserted into the center comes out clean.

  7. While the cake is baking, prepare the glaze by whisking together the powdered sugar and 1 tbsp of key lime juice until smooth.

  8. Once the cake is out of the oven, let it cool for 10 minutes. Then, poke several holes on top of the cake using a toothpick or skewer.

  9. Drizzle the key lime glaze over the warm cake, allowing it to soak into the holes.

  10. Let the cake cool completely before serving. Optionally, garnish with additional key lime zest or whipped cream.
