  • 2 cups rolled oats
  • 1 ½ cups milk
  • ½ cup honey
  • 1 tsp vanilla extract
  • 2 ripe bananas, mashed
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup raisins or other dried fruits (optional)
  • ½ cup nuts, chopped (optional)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.

  2. In a large bowl, combine the rolled oats and milk. Let it sit for about 5 minutes to allow the oats to soften.

  3. Stir in the honey, vanilla extract, and mashed bananas until well combined.

  4. In a separate bowl, whisk together the baking powder, baking soda, cinnamon, and salt.

  5. Gradually add the dry ingredients to the oat mixture, stirring until just combined. Fold in any optional mix-ins, such as raisins or nuts.

  6. Divide the batter evenly among the muffin cups, filling each about ¾ full.

  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

  8. Allow the muffins to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
