Ingredients

  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 150g unsalted butter, softened
  • 200g granulated sugar
  • 3 large eggs
  • Zest of 2 limes
  • 1 tbsp freshly grated ginger
  • 60ml fresh lime juice
  • 60ml milk

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a loaf pan.

  2. In a bowl, whisk together the flour, baking powder, and salt.

  3. In a separate bowl, cream together the butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, followed by the lime zest and grated ginger.

  5. Gradually add the flour mixture, alternating with the lime juice and milk, beginning and ending with the flour mixture.

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  8. While the cake is still warm, poke holes all over the top with a skewer.

  9. Mix together 60ml of lime juice and 50g of granulated sugar, then pour it over the cake, allowing it to soak in.

  10. Allow the cake to cool completely before serving.
