  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup mango puree
  • 1/4 cup milk
  • 1/4 cup chopped mango for garnish
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

  3. In a separate large bowl, cream together the butter and sugar until light and fluffy.

  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

  5. In another bowl, combine the mango puree and milk.

  6. Gradually add the flour mixture to the butter mixture, alternating with the mango mixture. Begin and end with the flour mixture, mixing well after each addition.

  7. Pour the batter into the prepared cake pan and smooth the top.

  8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  10. Once cooled, sprinkle powdered sugar over the top and garnish with chopped mango.

  11. Slice and serve.
