Ingredients

  • 125g unsalted butter, softened
  • 125g caster sugar
  • 2 medium eggs
  • 125g self-raising flour
  • 2 tbsp instant coffee, dissolved in 2 tbsp boiling water
  • 50g walnuts, chopped

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a round cake tin.

  2. In a mixing bowl, cream the butter and sugar together until light and fluffy.

  3. Beat in the eggs one at a time, adding a spoonful of flour with each egg.

  4. Fold in the remaining flour, coffee, and chopped walnuts until well combined.

  5. Pour the mixture into the prepared cake tin and smooth the top.

  6. Bake for 35 minutes or until a skewer inserted into the center comes out clean.

  7. Remove from the oven and allow to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
