Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1/4 cup strong brewed coffee
  • 2 tbsp rum (optional)
  • 1/2 cup chopped walnuts
  • For the coffee glaze:
  • 1/2 cup powdered sugar
  • 2 tbsp strong brewed coffee
  • 1 tbsp rum (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a round cake pan.

  2. In a mixing bowl, whisk together the flour and baking powder.

  3. In a separate large bowl, cream together the softened butter and sugar until light and fluffy.

  4. Beat in the eggs, one at a time, until well incorporated.

  5. Gradually add the flour mixture to the butter mixture, alternating with the coffee and rum (if using), beginning and ending with the flour mixture. Mix until just combined.

  6. Stir in the chopped walnuts.

  7. Pour the batter into the prepared cake pan and smooth the top.

  8. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  9. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  10. For the coffee glaze:

  11. In a small bowl, whisk together the powdered sugar, coffee, and rum (if using) until smooth.

  12. Drizzle the glaze over the cooled cake.

  13. Sprinkle with additional chopped walnuts, if desired.
