Ingredients

  • 200g butter
  • 200g sugar
  • 4 eggs
  • 200g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 100g raisins
  • 100g currants
  • 100g chopped mixed peel
  • 50g chopped almonds
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 tbsp brandy

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a round cake tin.

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs, one at a time, mixing well after each addition.

  4. In a separate bowl, sift together the flour, baking powder, cinnamon, nutmeg, and cloves.

  5. Gradually add the dry ingredients to the butter mixture, mixing well.

  6. Stir in the raisins, currants, mixed peel, almonds, orange zest, lemon zest, and brandy.

  7. Pour the batter into the prepared cake tin and smooth the top with a spatula.

  8. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the tin for 10 minutes, then transfer it to a wire rack to cool completely.
