  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup boiling water
  • 1 pint mint chocolate chip ice cream
  • 1 cup whipped cream
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat the oven to 350°F (180°C). Grease and flour a 9-inch round cake pan.

  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

  3. Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.

  4. Slowly pour in the boiling water and mix until the batter is smooth.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake in the preheated oven for 45 minutes or until a toothpick inserted into the center comes out clean.

  7. Remove the cake from the oven and let it cool completely on a wire rack.

  8. Once cooled, carefully slice the cake horizontally into two equal layers.

  9. Place one cake layer on a serving plate. Spread a thick layer of mint chocolate chip ice cream on top.

  10. Place the second cake layer on top and press gently to adhere.

  11. Frost the entire cake with whipped cream, covering it completely.

  12. Garnish with fresh mint leaves.

  13. Place the cake in the freezer for at least 4 hours or until the ice cream is firm.

  14. Remove from the freezer and let it sit at room temperature for a few minutes before serving.

  15. Slice and serve the frosty forest cake to enjoy its delicious and refreshing flavors.
