  • 2 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/4 cup dark rum
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  4. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.

  5. Gradually mix in the dry ingredients, alternating with the buttermilk, starting and ending with the dry ingredients.

  6. Pour the batter into the prepared cake pan and smooth the top.

  7. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  8. While the cake is baking, prepare the banana fosters sauce. In a small saucepan, melt the butter over medium heat.

  9. Stir in the brown sugar and cook until the sugar has dissolved and the mixture starts to bubble.

  10. Carefully add the rum and cook for an additional 2 minutes to burn off the alcohol.

  11. Stir in the heavy cream and simmer for another minute. Remove from heat and set aside.

  12. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

  13. Once the cake is cooled, pour the banana fosters sauce over the top, allowing it to drizzle down the sides.

  14. Serve the cake slices with extra sauce and a scoop of vanilla ice cream, if desired.
