Ingredients

  • 2 cups strong brewed coffee
  • 24 ladyfinger cookies
  • 1/2 cup granulated sugar
  • 4 egg yolks
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 2 tbsp cocoa powder, for dusting

Instructions

  1. In a shallow dish, pour the brewed coffee and set aside.

  2. In a mixing bowl, beat the egg yolks and sugar until pale and creamy.

  3. Add mascarpone cheese to the egg mixture and beat until well combined.

  4. In a separate bowl, whip the heavy cream until stiff peaks form.

  5. Gently fold the whipped cream into the mascarpone mixture until smooth.

  6. Dip each ladyfinger cookie into the coffee, briefly on each side, and line them in a serving dish.

  7. Spread half of the mascarpone mixture over the ladyfingers.

  8. Repeat with another layer of dipped ladyfingers and remaining mascarpone mixture.

  9. Cover and refrigerate for at least 6 hours or overnight.

  10. Before serving, dust the top with cocoa powder.

  11. Slice and serve chilled. Enjoy!
