Ingredients

  • 2 bulbs of fennel, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1/2 cup of Kalamata olives
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of olive oil
  • 2 tablespoons of freshly squeezed lemon juice
  • 1/2 teaspoon of ground cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the sliced fennel, red onion, olives and chopped parsley.

  2. In a separate bowl, whisk together the olive oil, lemon juice, cumin, salt and pepper.

  3. Pour the dressing over the salad and toss well.

  4. Serve immediately or chill until ready to serve.
