Ingredients

  • 4 tangerines, peeled and segmented
  • 1 small fennel bulb, thinly sliced
  • 1/4 red onion, thinly sliced
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp honey
  • Pinch of salt and pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. In a large bowl, combine the tangerine segments, sliced fennel, and sliced red onion.

  2. In a small bowl, whisk together the olive oil, white wine vinegar, honey, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat.

  4. Sprinkle with fresh parsley and serve.
