How To Make Tunisian Date Pudding
This creamy and indulgent pudding is made with the natural sweetness of dates and a warm blend of spices.

Ingredients
- 1 cup pitted dates, chopped
- 1 and 1/2 cups whole milk
- 1/2 cup heavy cream
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cardamom
- 1/4 tsp salt
- 2 large eggs
- 1 tsp vanilla extract
Instructions

In a medium saucepan, combine the chopped dates, milk, heavy cream, sugar, spices, and salt. Bring to a simmer over medium heat, stirring occasionally.

Reduce the heat to low and let the mixture simmer for 10-15 minutes until the dates are soft and the mixture has thickened.

In a small bowl, whisk together the eggs and vanilla extract.

Slowly pour the egg mixture into the saucepan, whisking constantly to prevent curdling.

Continue to stir the mixture over low heat for another 5-10 minutes until thick and creamy.
