Ingredients

  • 4 salmon fillets
  • 2 fennel bulbs, thinly sliced
  • 1 cup green olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat grill or grill pan.

  2. Season salmon with salt and pepper.

  3. Grill salmon for 3-4 minutes per side, until charred and cooked through.

  4. In a large bowl, combine fennel, olives, parsley, olive oil, lemon juice, salt, and pepper.

  5. Serve the charred salmon over the fennel and olive salad.
