How To Make Chorizo & Cabbage Stew

Serves:
Ingredients
- 1 lb chorizo sausage, sliced
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 small head of cabbage, thinly sliced
- 2 carrots, diced
- 2 potatoes, peeled and diced
- 4 cups chicken broth
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pot or Dutch oven, cook the chorizo over medium heat until browned and cooked through. Remove from the pot and set aside.

In the same pot, add the onion and garlic. Cook until softened and fragrant.

Add the cabbage, carrots, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.

Return the chorizo to the pot. Add the chicken broth and smoked paprika. Season with salt and pepper.

Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 30 minutes, or until the vegetables are tender.

Serve the stew hot, garnished with fresh parsley.
