How To Make Chorizo, Potato & Cheese Omelette

Ingredients
- 6 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 chorizo sausages, diced
- 1 cup potatoes, boiled and diced
- 1 cup shredded cheddar cheese
- 2 tbsp chopped fresh parsley
Instructions

In a bowl, whisk together the eggs, milk, salt, and black pepper.

In a large non-stick skillet, cook the diced chorizo over medium heat until crispy. Remove from the skillet and set aside.

In the same skillet, add the diced potatoes and cook until golden brown and crispy.

Reduce the heat to low and pour the egg mixture over the potatoes in the skillet.

Sprinkle the cooked chorizo and shredded cheese evenly over the eggs.

Cover the skillet and cook for about 10 minutes, or until the eggs are set and the cheese is melted.
