  • 1 pie crust
  • 1/2 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 eggs
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Roll out the pie crust and press it into a greased 9-inch pie dish.

  3. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  4. Add the taco seasoning, onions, and bell peppers to the skillet. Cook for 2-3 minutes until onions are softened.

  5. Spread the ground beef mixture evenly over the pie crust.

  6. In a bowl, whisk together the eggs, milk, salt, and black pepper. Pour the mixture over the ground beef.

  7. Sprinkle the shredded cheese on top.

  8. Bake for 25-30 minutes until the quiche is set and the cheese is melted and golden.

  9. Remove from the oven and let it cool for a few minutes.

  10. Garnish with diced tomatoes and chopped cilantro before serving.
