How To Make Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

Ingredients
- 1.5 lbs pork shoulder, cut into cubes
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 lb tomatillos, husked and quartered
- 2 jalapenos, seeded and chopped
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large pot over medium heat. Add pork and cook until browned on all sides. Remove pork and set aside.

In the same pot, add onions and garlic. Cook until onions are softened.

Add tomatillos and jalapenos. Cook for 5 minutes, until tomatillos are softened.

Return pork to the pot and add chicken broth, oregano, cumin, salt, and pepper. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour, stirring occasionally.

Remove lid and simmer for an additional 30 minutes to reduce the sauce.

Serve the stew hot, garnished with fresh cilantro.
