Serves:
Ingredients
- 2 lbs beef chuck roast
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground cinnamon
- 4 cups beef broth
- 1 cup diced tomatoes
- 2 chipotle peppers in adobo sauce, chopped
- 1/4 cup chopped fresh cilantro
- Corn tortillas, for serving
- Lime wedges, for serving
Instructions
-
In a large pot, heat some oil over medium heat. Add the beef roast and sear on all sides until browned. Remove from the pot and set aside.
-
In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent.
-
Add the chili powder, cumin, oregano, and cinnamon to the pot. Stir well to coat the onions and garlic.
-
Pour in the beef broth, diced tomatoes, and chopped chipotle peppers. Stir everything together.
-
Return the seared beef roast to the pot and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 3-4 hours, or until the meat is tender and easily shreds.
-
Once the meat is tender, remove it from the pot and shred it using two forks.
-
Return the shredded meat to the pot and simmer for an additional 30 minutes to allow the flavors to meld.
-
Stir in the chopped cilantro and season with salt and pepper to taste.
-
Serve the birria with warm corn tortillas and lime wedges. Enjoy!
