Ingredients

  • 2 lbs beef chuck roast, cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 tsp cumin powder
  • 1 tsp oregano
  • 1 tbsp paprika
  • 2 tbsp vegetable oil
  • 4 cups beef broth
  • 1/4 cup apple cider vinegar
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Tortillas, for serving

Instructions

  1. Season the beef chunks with salt and pepper.

  2. In a large pot, heat the vegetable oil over medium-high heat. Add the beef chunks and brown them on all sides. Remove from the pot and set aside.

  3. In the same pot, add the chopped onion and minced garlic. Sauté until tender and fragrant.

  4. Return the beef chunks to the pot and add the bay leaves, cinnamon stick, cumin powder, oregano, paprika, beef broth, and apple cider vinegar. Stir to combine.

  5. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 3-4 hours, or until the beef is tender and falls apart easily.

  6. Remove the bay leaves and cinnamon stick from the pot.

  7. Using two forks, shred the beef into smaller pieces.

  8. Serve the beef birria in bowls, garnished with fresh cilantro. Serve with lime wedges and warm tortillas for dipping.
