Ingredients

  • 8 oz. Korean glass noodles (dangmyeon)
  • 2 tbsp vegetable oil, divided
  • 2 cloves garlic, minced
  • 1 onion, thinly sliced
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 4 oz. spinach
  • 4 oz. mushrooms, thinly sliced
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp toasted sesame seeds
  • Salt and pepper to taste

Instructions

  1. Bring a pot of water to boil. Cook the glass noodles according to package instructions. Drain and rinse with cold water.

  2. In a large pan, heat 1 tbsp vegetable oil over medium heat. Add garlic and sauté until fragrant.

  3. Add onion, carrot, and bell pepper. Cook until vegetables are tender.

  4. Add spinach and mushrooms. Cook until spinach is wilted and mushrooms are cooked through.

  5. In a small bowl, whisk together soy sauce, sesame oil, sugar, salt, and pepper. Pour the sauce over the vegetables and mix well.

  6. Add the cooked glass noodles to the pan and toss until well coated with the sauce.

  7. Sprinkle toasted sesame seeds on top. Serve hot or cold.
