Ingredients

  • 4 ripe tomatoes
  • 1 cup marinated artichoke hearts
  • 1/4 cup sliced black olives
  • 1/4 cup sliced red onions
  • 2 tbsp chopped fresh basil
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Slice the tomatoes and arrange them on a platter.

  2. Drain the marinated artichoke hearts and arrange them on the platter with the tomatoes.

  3. Sprinkle sliced black olives and red onions over the tomatoes and artichoke hearts.

  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

  5. Drizzle the dressing over the platter.

  6. Sprinkle chopped fresh basil on top.

  7. Serve immediately.
