Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 tbsp unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 small beetroot, shredded
  • 4 slices bacon, cooked and crumbled
  • 1/2 cup cheddar cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, baking powder, and salt. Add the butter and use your fingers or a pastry cutter to cut it into the flour until it resembles coarse crumbs.

  3. Gradually add the milk while stirring, until a soft dough forms.

  4. Turn the dough out onto a floured surface and knead for 2-3 minutes, until smooth and elastic.

  5. Roll the dough into a large rectangle, about 1/4 inch thick.

  6. Spread the shredded beetroot, crumbled bacon, and grated cheddar cheese evenly over the dough.

  7. Starting from one long side, tightly roll the dough into a log shape.

  8. Cut the log into 1-inch thick slices and place them cut-side up on the prepared baking sheet.

  9. Bake for 25-30 minutes, or until golden brown and cooked through.

  10. Allow the scrolls to cool for a few minutes before serving.
