How To Make Chilled Green Soup with Feta

Ingredients
- 2 ripe avocados, pitted and peeled
- 2 cucumbers, peeled and chopped
- 1 cup fresh spinach leaves
- 1 cup fresh basil leaves
- 1 garlic clove
- 2 tablespoons lemon juice
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup crumbled feta cheese
Instructions

In a blender or food processor, combine the avocados, cucumbers, spinach, basil, garlic, lemon juice, Greek yogurt, and olive oil. Blend until smooth.

Season with salt and pepper to taste.

Transfer the soup to a large bowl or individual serving bowls and refrigerate for at least 1 hour.

Before serving, sprinkle the chilled soup with crumbled feta cheese.
