How To Make Trio’s Roasted Vegetable Panini

A delicious vegetarian sandwich with roasted vegetables, pesto, and mozzarella cheese.

Serves:

Ingredients

  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 4 tbsp olive oil, divided
  • Salt and pepper, to taste
  • 8 slices of bread
  • 4 tbsp pesto
  • 8 slices of mozzarella cheese

Instructions

  1. Preheat oven to 400°F.

  2. Toss sliced vegetables with 2 tbsp olive oil and salt and pepper. Place on a baking sheet and roast for 20-25 minutes, or until tender.

  3. Brush remaining olive oil on one side of each bread slice. Spread pesto on one side and top with roasted vegetables and mozzarella cheese.

  4. Heat a panini press or grill pan over medium-high heat. Place sandwiches on the press or pan and grill for 3-4 minutes on each side, until bread is toasted and cheese is melted.

  5. Cut sandwiches in half and serve hot.
