  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper, to taste
  • 1 bag tortilla chips
  • 1 cup shredded cheddar cheese
  • 1/4 cup sliced jalapenos
  • 1/4 cup chopped cilantro

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a large skillet, heat olive oil over medium-high heat. Add sliced peppers, onion, and garlic. Cook until veggies are tender.

  3. Add chili powder, cumin, salt, and pepper to the skillet and stir to combine.

  4. Arrange tortilla chips on a baking sheet. Top with cooked veggies and shredded cheese.
