How To Make The Border Chicken Enchiladas Recipe
Delicious and flavorful chicken enchiladas wrapped in corn tortillas and smothered in a savory sauce.

Ingredients
- 2 cups cooked chicken, shredded
- 1/2 cup diced onions
- 1/2 cup diced green bell pepper
- 1 tbsp olive oil
- 8 corn tortillas
- 1 cup enchilada sauce
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions

Preheat oven to 350°F.

In a skillet, sauté onions and green bell pepper in olive oil until onions are translucent.

Add cooked chicken to the skillet and season with salt and pepper. Mix well.

Prepare a 9×13 inch baking dish.

Warm the corn tortillas in the microwave or on a skillet.

Spoon the chicken mixture onto each tortilla and roll up tightly. Place seam side down in the baking dish.

Pour enchilada sauce over the rolled tortillas.

Sprinkle shredded cheese on top of the sauce.

Cover with foil and bake for 30 minutes.

Uncover and bake for an additional 10 minutes until cheese is melted and bubbly.
