Ingredients

  • 1 pie crust
  • 1/2 cup sugar
  • 3 tbsp cornstarch
  • 1/8 tsp salt
  • 2 eggs
  • 1/2 cup lemon juice
  • 2 tbsp unsalted butter
  • 1 cup heavy cream
  • 1 tsp vanilla extract
  • Lemon zest (optional)

Instructions

  1. Preheat oven to 375°F.

  2. Press the pie crust into a 9-inch pie dish and bake for 15 minutes; let it cool completely.

  3. In a saucepan, whisk sugar, cornstarch, salt, eggs, lemon juice, and butter until smooth.

  4. Cook over medium heat while stirring until thickened (about 5 minutes).

  5. Remove from heat and chill for 30 minutes.

  6. In a medium bowl, beat heavy cream and vanilla extract until stiff peaks form.

  7. Fold in the lemon custard completely.

  8. Pour into fully cooled pie crust and refrigerate for at least 2 hours or overnight.

  9. Garnish with lemon zest before serving (optional).
