Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the egg, lemon juice, zest, and vanilla extract.

  4. In a separate bowl, combine the flour, salt, baking powder, and baking soda.

  5. Gradually add the dry ingredients to the mixing bowl and beat until just combined.

  6. Scoop 1 tbsp balls of dough and roll them in powdered sugar.

  7. Place the cookie balls on the prepared baking sheet about 2 inches apart.

  8. Bake for 12-15 minutes or until the edges are set and the centers are slightly gooey.

  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
