Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg, room temperature
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
Instructions

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the egg, lemon juice, zest, and vanilla extract.

In a separate bowl, combine the flour, salt, baking powder, and baking soda.

Gradually add the dry ingredients to the mixing bowl and beat until just combined.

Scoop 1 tbsp balls of dough and roll them in powdered sugar.

Place the cookie balls on the prepared baking sheet about 2 inches apart.
