How To Make Savannah Smile Lemon Ricotta Pancakes
Fluffy lemon ricotta pancakes that will put a smile on your face!
Serves:
Ingredients
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup ricotta cheese
- 3/4 cup milk
- 2 eggs
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1 tsp vanilla extract
- Butter or cooking spray for cooking
Instructions

In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl, mix together the ricotta cheese, milk, eggs, lemon zest, lemon juice, and vanilla extract until well combined.

Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

Heat a non-stick skillet or griddle over medium-high heat. Melt a small amount of butter or spray with cooking spray.

Spoon about 1/4 cup of the batter onto the skillet for each pancake.

Cook until bubbles form on the surface of the pancake and the bottom is golden brown. Flip and cook until the other side is golden brown.

Repeat with the remaining batter.

Serve warm with your favorite toppings such as fresh berries, syrup, or whipped cream.
