Ingredients

  • 2 cups of all-purpose flour
  • 1/3 cup of sugar
  • 1 tbsp of baking powder
  • 1/2 tsp of salt
  • 1/2 cup of cold butter, cut into small pieces
  • 1 cup of fresh blueberries
  • 1/2 cup of heavy cream
  • 1 egg
  • 1 tbsp of fresh lemon juice
  • 1 tsp of lemon zest

Instructions

  1. Preheat oven to 400°F. Line baking sheet with parchment paper.

  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.

  3. Cut in butter until mixture resembles coarse crumbs.

  4. Gently fold in blueberries.

  5. In a separate bowl, whisk together cream, egg, lemon juice, and zest.

  6. Gradually add wet mixture to dry mixture, stirring until just combined.

  7. Turn dough onto floured surface. Pat into a circle, approx. 1 inch thick.

  8. Cut circle into 8 triangles. Arrange on baking sheet.

  9. Brush scones with additional cream, if desired.
