How To Make Pollo Loco Rice Recipe
A deliciously flavorful Mexican-inspired rice dish with tender chicken and vibrant veggies.

Ingredients
- 1 cup of long-grain white rice
- 1 tbsp of olive oil
- 1 lb of boneless, skinless chicken breast, diced
- 1 diced red onion
- 1 diced red bell pepper
- 1 diced green bell pepper
- 2 minced garlic cloves
- 1 tsp of ground cumin
- 1 tsp of chili powder
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1/4 cup of chopped fresh cilantro
- Salt and pepper to taste
Instructions

In a large pot, cook rice according to package instructions.

Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes or until browned.

Add onion, bell peppers, garlic, cumin, and chili powder. Cook for another 5 minutes.

Add diced tomatoes with their juice and chicken broth. Stir and let simmer for 10-15 minutes or until chicken is fully cooked and veggies are tender.

Stir in cilantro and salt and pepper to taste.
