How To Make Pollo Loco Rice Recipe

Serves:

Ingredients

  • 1 cup of long-grain white rice
  • 1 tbsp of olive oil
  • 1 lb of boneless, skinless chicken breast, diced
  • 1 diced red onion
  • 1 diced red bell pepper
  • 1 diced green bell pepper
  • 2 minced garlic cloves
  • 1 tsp of ground cumin
  • 1 tsp of chili powder
  • 1 can of diced tomatoes
  • 1 cup of chicken broth
  • 1/4 cup of chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook rice according to package instructions.

  2. Heat olive oil in a skillet over medium-high heat. Add chicken and cook for 5-7 minutes or until browned.

  3. Add onion, bell peppers, garlic, cumin, and chili powder. Cook for another 5 minutes.

  4. Add diced tomatoes with their juice and chicken broth. Stir and let simmer for 10-15 minutes or until chicken is fully cooked and veggies are tender.

  5. Stir in cilantro and salt and pepper to taste.

  6. Serve hot with cooked rice.
