How To Make Pollo Loco Burrito Recipe

This savory burrito is filled with tender grilled chicken, rice, beans and salsa, wrapped in a warm tortilla.

Ingredients

  • 4 large flour tortillas
  • 2 cups cooked white rice
  • 1 can black beans, drained and rinsed
  • 2 cups grilled chicken, shredded
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add cooked rice, black beans, grilled chicken, salsa, salt and pepper. Stir to combine.

  3. Place a tortilla on a plate, and spread the chicken and rice mixture in a straight line down the center.

  4. Sprinkle shredded cheese on top of the chicken and rice mixture.

  5. Rolling tightly, fold the sides in, and then continue to roll the burrito up.

  6. Repeat with remaining tortillas and ingredients.

  7. Serve with additional salsa and garnish with fresh cilantro, if desired.
