Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup peanut butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.

  2. In a large bowl, cream together butter, peanut butter, white sugar, and brown sugar until light and fluffy.

  3. Add in egg and vanilla extract, beating until well combined.

  4. In a separate bowl, sift together flour, baking soda, baking powder, and salt.

  5. Gradually mix dry ingredients into wet mixture until smooth.

  6. Roll dough into small balls, and place onto baking sheet.

  7. Press each ball down with a fork, making crisscross marks on the surface.

  8. Bake for 12 minutes, or until cookies are lightly browned around the edges.

  9. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
