How To Make Mrs. Clinton’s Oatmeal Raisin Cookies
Soft, chewy cookies filled with hearty oats and sweet raisins.

Ingredients
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 and 1/2 cups old-fashioned rolled oats
- 3/4 cup raisins
Instructions

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.

In a large bowl, using an electric mixer, beat the butter, granulated sugar, and brown sugar until creamy.

Beat in the egg and vanilla extract.

Gradually mix in the flour mixture until just combined.

Fold in the oats and raisins.

Using a spoon or cookie scoop, drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes or until the edges are golden brown and the centers are set.

Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
