A vegetarian twist on the classic eggs benedict with sautéed spinach and tomato.

Ingredients

  • 4 English muffins, split and toasted
  • 1 cup sautéed spinach
  • 4 slices of tomato
  • 8 poached eggs
  • 1 cup hollandaise sauce

Instructions

  1. Toast your English muffins and keep them warm.

  2. Sauté spinach until wilted and set aside.

  3. Place a slice of tomato on each half of the muffin.

  4. Top each half with sautéed spinach.

  5. Poach eggs until desired doneness.

  6. Top each half with a poached egg.

  7. Spoon hollandaise sauce over the top.
