How To Make Garrett’s White Chocolate Caramel Corn Recipe

Deliciously sweet and salty popcorn coated in creamy white chocolate and gooey caramel.

Ingredients

  • 1/2 cup popcorn kernels
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar
  • 1/4 cup corn syrup
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 250°F. Line a baking sheet with parchment paper.

  2. Pop popcorn kernels in an air popper.

  3. In a saucepan, melt butter, brown sugar, corn syrup and salt. Bring to a boil and cook for 4 minutes. Remove from heat.

  4. Add baking soda and vanilla extract. Stir until mixture becomes light and foamy.

  5. Pour caramel over popcorn, tossing quickly to coat evenly. Spread popcorn on the prepared baking sheet.

  6. Bake popcorn in preheated oven for 45 minutes, stirring every 15 minutes.

  7. Melt white chocolate chips in a microwave or a double boiler. Drizzle over the popcorn and let cool for 10 minutes. Enjoy.
