How To Make Aunt Susie’s Corn Chowder

A hearty and creamy soup with sweet corn, bacon, and potatoes.

Ingredients

  • 4 slices of bacon, chopped
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 3 potatoes, peeled and diced
  • 2 cups of corn kernels (fresh or frozen)
  • 3 cups of chicken broth
  • 1 cup of heavy cream
  • salt and pepper to taste

Instructions

  1. In a large pot, cook bacon over medium heat until crispy.

  2. Add onion and garlic to the pot, cooking until softened.

  3. Mix in potatoes and corn, and let cook for a few minutes.

  4. Pour in chicken broth, cover, and simmer until potatoes are tender.

  5. Mix in heavy cream, and continue to cook until heated through. Add salt and pepper to taste.

  6. Serve hot, garnished with additional bacon or chopped scallions if desired.
