Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 2 eggs
  • 1 cup granulated sugar
  • 1/4 cup lemon juice
  • 2 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine 1 cup flour, 1/2 cup softened butter, and 1/4 cup powdered sugar until crumbly.

  3. Press mixture into the bottom of an 8×8 inch baking pan. Bake for 20 minutes or until lightly golden brown.

  4. Beat together 2 eggs, 1 cup granulated sugar, 1/4 cup lemon juice, 2 tbsp flour, and 1/2 tsp baking powder until well combined.

  5. Pour mixture onto the crust and bake for an additional 20-25 minutes or until set.

  6. Once cooled, dust with powdered sugar and cut into squares.
