  • 1 refrigerated pie crust
  • 1 cup mashed sweet potato

  • 1 egg, beaten

Instructions

  1. Preheat the oven to 375°F.

  2. Place the refrigerated pie crust in a 9-inch pie dish and crimp the edges.

  3. In a large mixing bowl, combine the mashed sweet potato, brown sugar, heavy cream, cinnamon, nutmeg, salt, beaten egg, and vanilla extract. Mix until everything is well combined.

  4. Pour the mixture into the prepared pie crust.

  5. Bake for 45-50 minutes, or until the pie has set and is lightly golden brown.
