Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 zucchinis, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup chicken broth
  • Juice of 1 lemon
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with salt, pepper, thyme, oregano, and paprika.

  2. In a large pot or skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides. Remove the chicken from the pot and set aside.

  3. In the same pot, add the diced onion and minced garlic. Sauté until fragrant.

  4. Add the sliced bell peppers, zucchinis, and cherry tomatoes to the pot. Cook until the vegetables are slightly softened.

  5. Return the chicken to the pot and pour in the chicken broth and lemon juice. Bring to a simmer and cover the pot. Cook for 25-30 minutes, or until the chicken is cooked through.

  6. Serve the chicken and vegetables in shallow bowls. Garnish with fresh parsley.
