Ingredients

  • 4 cups mixed vegetables (broccoli, bell peppers, carrots, zucchini, etc.)
  • 2 tablespoons olive oil
  • 1/4 cup teriyaki sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Sesame seeds, for garnish
  • Cooked rice, for serving

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the mixed vegetables with olive oil, teriyaki sauce, soy sauce, honey, garlic powder, ginger powder, red pepper flakes, salt, and pepper.

  3. Spread the vegetables in a single layer on a baking sheet.

  4. Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.

  5. Remove from the oven and sprinkle with sesame seeds.

  6. Serve the roasted teriyaki vegetables over cooked rice.
