How To Make Spatchcock Piri-Piri Chicken

Ingredients
- 1 whole chicken
- 4 tablespoons piri-piri sauce
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

Preheat the grill or oven to 425°F (220°C).

Spatchcock the chicken by removing the backbone and flattening it out.

In a bowl, combine piri-piri sauce, olive oil, lemon juice, minced garlic, paprika, salt, and black pepper.

Place the chicken in a large ziplock bag and pour the marinade over it. Seal the bag and massage the marinade into the chicken, making sure it’s well coated. Let it marinate for at least 1 hour or overnight.

If grilling, place the chicken skin-side down on the grill and cook for about 20-25 minutes, then flip and cook for another 20-25 minutes until the internal temperature reaches 165°F (74°C).

If baking, place the chicken on a roasting rack in a baking dish and cook for about 40-45 minutes until the internal temperature reaches 165°F (74°C).

Remove the chicken from the grill or oven and let it rest for 5-10 minutes before slicing. Serve with extra piri-piri sauce on the side.
