How To Make One-Pan Piri Piri Chicken Dinner

Ingredients
- 4 chicken thighs
- 2 potatoes, cut into wedges
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 3 cloves of garlic, minced
- 1 lemon, juiced
- 2 tbsp olive oil
- 2 tsp paprika
- 2 tsp dried oregano
- 1 tsp cayenne pepper
- 1 tsp salt
- 1/2 tsp black pepper
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, combine the minced garlic, lemon juice, olive oil, paprika, dried oregano, cayenne pepper, salt, and black pepper.

Add the chicken thighs to the bowl and toss to coat them well with the marinade. Let it marinate for at least 15 minutes.

Heat a large oven-safe skillet over medium-high heat and add the marinated chicken thighs. Sear them for 3-4 minutes on each side until they get a nice golden brown color.

Remove the chicken thighs from the skillet and set them aside.

In the same skillet, add the potato wedges, sliced bell peppers, and red onion. Season with salt and black pepper and toss to combine.

Place the seared chicken thighs on top of the vegetables and transfer the skillet to the preheated oven. Bake for 30-35 minutes until the chicken is cooked through and the vegetables are tender.

Remove from the oven and let it rest for a few minutes before serving.
