How To Make Spiced Yogurt Spatchcock Chicken

Ingredients
- 1 whole chicken (about 4 lbs)
- 1 cup plain Greek yogurt
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons ground cumin
- 2 teaspoons ground paprika
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 425°F (220°C).

Place the chicken breast-side down on a cutting board. Use kitchen shears to cut along both sides of the backbone and remove it.

Flip the chicken over and press down firmly on the breastbone to flatten it (this is called spatchcocking).

In a bowl, mix together the yogurt, olive oil, lemon juice, cumin, paprika, coriander, turmeric, cinnamon, salt, and black pepper.

Place the spatchcocked chicken in a roasting pan and pour the yogurt mixture over it, making sure to coat it evenly.

Roast the chicken in the preheated oven for about 45 minutes, or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for about 10 minutes before carving.

Serve the spiced yogurt spatchcock chicken with fresh cilantro for a flavorful garnish.
