How To Make Roast Pork with Lemon Gremolata

Ingredients
- 2 lbs pork loin
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- Zest of 1 lemon
- 1/4 cup chopped fresh parsley
Instructions

Preheat the oven to 375°F.

In a small bowl, mix together the minced garlic, salt, black pepper, and olive oil.

Rub the garlic mixture all over the pork loin.

Place the pork loin on a roasting pan and roast in the preheated oven for 1 hour or until the internal temperature reaches 145°F.

While the pork is roasting, prepare the gremolata by combining the lemon zest and chopped parsley in a small bowl.

Once the pork is done, remove it from the oven and let it rest for 10 minutes before slicing.

Sprinkle the lemon gremolata over the sliced pork before serving.
